Ingredients:

  • 1 lb lean ground beef
  • 1 packet (28g) taco seasoning
  • 1 can (10 oz) Rotel Diced Tomatoes and Green Chilies
  • 16 oz Velveeta cheese, cubed into 1-inch pieces

Instructions:

  1. Heat your skillet over medium high heat and add the lean ground beef.
  2. Cook the beef, breaking it apart with your spatula, until it is mahogany colored. Note: Don't rush this; the brown bits are where the flavor lives.
  3. Drain the excess grease thoroughly using a colander or by tilting the pan and spooning it out.
  4. Sprinkle the taco seasoning over the beef.
  5. Stir for 1-2 minutes until the spices smell fragrant and toasted.
  6. Turn the heat down to medium low.
  7. Stir in the cubed Velveeta and the entire can of Rotel including the liquid.
  8. Stir constantly until the cheese is fully incorporated and bubbling.
  9. Remove from heat immediately once the texture is velvety.
