Ingredients:
- 1 lb lean ground beef (90% lean)
- 1 tsp garlic powder
- 1/2 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 16 oz Velveeta or processed cheddar cheese, cubed
- 4 oz cream cheese, softened and cubed
- 1 can (14.5 oz) ROTEL Delicious Tomatoes and Zesty Diced Green Chilies (undrained)
Instructions:
- Place the skillet over medium-high heat. Add the lean ground beef and cook, breaking it apart with a spatula, until fully browned and no pink remains.
- Stir in the garlic powder, smoked paprika, salt, and pepper during the last 2 minutes of browning to toast the spices.
- Drain the beef thoroughly in a colander to remove excess fat. Return the meat to the skillet on low heat.
- Reduce heat to medium-low. Add the cubed Velveeta and cream cheese to the skillet.
- Stir constantly in a circular motion, pressing the cheese against the sides of the pan until the mixture is smooth and glossy.
- Pour in the entire can of ROTEL Delicious Tomatoes and Zesty Diced Green Chilies, including the liquid.
- Stir gently for 2–3 minutes until the tomatoes are evenly distributed and the dip is simmering. Remove from heat immediately.
