Ingredients:
- 1 cup (200g) brown sugar, packed
- 1/2 cup (115g) unsalted butter
- 1 cup (125g) chopped pecans
- 1/4 cup (60ml) corn syrup
- 1/2 tsp (3g) salt
- 24 oz (680g) full-fat cream cheese, softened
- 3/4 cup (150g) granulated sugar
- 1 cup (245g) pumpkin puree
- 3 large eggs
- 1/2 cup (120g) sour cream
- 2 tsp (10g) vanilla extract
- 1 tbsp (6g) pumpkin pie spice
- 2 tbsp (16g) all-purpose flour
- 1 cup (240ml) heavy whipping cream, chilled
- 2 tbsp (30g) powdered sugar
- 1/2 tsp (2g) cinnamon
Instructions:
- Combine brown sugar, butter, corn syrup, and salt in a saucepan over medium heat. Stir until melted and bubbling slightly.
- Stir in the chopped pecans and remove from heat immediately.
- Pour the pecan mixture into a parchment-lined 9-inch springform pan and spread evenly. Let cool for 10 minutes.
- Beat softened cream cheese and granulated sugar on medium-high until smooth and aerated (about 3 minutes).
- Blend in the pumpkin puree, vanilla extract, and pumpkin pie spice until the color is uniform.
- Add eggs one at a time, beating on low speed just until incorporated.
- Fold in the sour cream and all-purpose flour using a rubber spatula until the batter is velvety and lump-free.
- Pour the pumpkin batter over the set pecan base and bake according to specified temperature management (approximately 1 hour 46 minutes).
- Chill the cheesecake in the refrigerator for at least 6 hours before serving.
- Whip heavy cream, powdered sugar, and cinnamon together and apply as garnish before slicing.
