Ingredients:
- 4 oz (113g) cream cheese, softened
- 2 tbsp (25g) granulated sugar
- 1/4 tsp (1g) vanilla extract
- 1/2 cup (115g) unsalted butter, softened
- 3/4 cup (150g) brown sugar, packed
- 1 large egg
- 1/3 cup (80g) pumpkin puree
- 1 tsp (5ml) vanilla extract
- 2 cups (250g) all-purpose flour
- 1 tsp (5g) baking soda
- 1 tsp (2g) pumpkin pie spice
- 1/2 tsp (3g) salt
- 2 tbsp (25g) granulated sugar
- 1 tsp (2g) ground cinnamon
Instructions:
- Beat the softened cream cheese, 2 tbsp sugar, and vanilla until velvety and smooth.
- Scoop 12 small balls (about 1 tsp each) onto a tray and place in the freezer for 20 minutes to flash-freeze.
- Cream the softened butter and brown sugar until light and fluffy.
- Beat in the egg, pumpkin puree, and vanilla extract until fully incorporated.
- In a separate bowl, whisk flour, baking soda, pumpkin pie spice, and salt.
- Gradually stir the dry ingredients into the wet mixture until a soft dough forms; do not overmix.
- Preheat oven to 350°F (175°C).
- Take a tablespoon of pumpkin dough, flatten it into a disc in your palm, and place one frozen cheesecake ball in the center.
- Wrap the dough around the filling to form a ball, roll in the cinnamon sugar mixture, and place on a parchment-lined baking sheet.
- Bake for 12 minutes or until the edges are set.
