Ingredients:
- 1.5 lbs boneless, skinless chicken thighs
- 2 tbsp olive oil
- 1 tbsp lime juice
- 3 cloves minced garlic
- ½ tsp salt
- ½ tsp black pepper
- ¼ cup pure maple syrup
- 1 tbsp lime juice
- 1 tsp lime zest
- 1 tbsp soy sauce
Instructions:
- In a large bowl, toss the chicken thighs with olive oil, 1 tablespoon lime juice, minced garlic, salt, and pepper. Let the chicken sit at room temperature for 10 minutes to tenderize.
- Cook the chicken: For Air Fryer, arrange in a single layer at 400°F (200°C) for 12–15 minutes, flipping halfway. For Oven, place on a parchment-lined tray at 425°F (220°C) for 18–20 minutes until edges are golden.
- Whisk together the maple syrup, remaining 1 tablespoon lime juice, lime zest, and soy sauce in a small bowl.
- During the last 3–5 minutes of cooking, brush the glaze generously over each thigh and return to the heat until the glaze bubbles and becomes thick and sticky.
