Ingredients:

  • 2 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp kosher salt
  • 1/2 tsp cracked black pepper
  • 1/4 tsp cayenne pepper
  • 1.5 lbs frozen boneless skinless chicken thighs
  • 1 cup low sodium chicken broth
  • 1 tbsp olive oil

Instructions:

  1. Combine smoked paprika, garlic powder, onion powder, kosher salt, black pepper, and cayenne pepper in a small bowl.
  2. Generously coat the frozen chicken thighs with the prepared dry rub seasoning.
  3. Pour 1 cup of low sodium chicken broth into the Instant Pot inner pot and place the stainless steel trivet inside.
  4. Arrange the seasoned frozen thighs on top of the trivet, stacking them in a pyramid if necessary to allow steam circulation.
  5. Secure the lid, set the valve to 'Sealing', and select Manual/Pressure Cook on High Pressure for 20 minutes.
  6. Once the timer expires, allow a Natural Release for 10 minutes before venting any remaining steam.
