Ingredients:
- 2 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp kosher salt
- 1/2 tsp cracked black pepper
- 1/4 tsp cayenne pepper
- 1.5 lbs frozen boneless skinless chicken thighs
- 1 cup low sodium chicken broth
- 1 tbsp olive oil
Instructions:
- Combine smoked paprika, garlic powder, onion powder, kosher salt, black pepper, and cayenne pepper in a small bowl.
- Generously coat the frozen chicken thighs with the prepared dry rub seasoning.
- Pour 1 cup of low sodium chicken broth into the Instant Pot inner pot and place the stainless steel trivet inside.
- Arrange the seasoned frozen thighs on top of the trivet, stacking them in a pyramid if necessary to allow steam circulation.
- Secure the lid, set the valve to 'Sealing', and select Manual/Pressure Cook on High Pressure for 20 minutes.
- Once the timer expires, allow a Natural Release for 10 minutes before venting any remaining steam.
