Ingredients:
- 1.5 cups (150g) gluten-free gingersnap crumbs
- 0.5 cup (50g) almond flour
- 6 tbsp (85g) unsalted butter, melted
- 0.25 tsp (1.5g) salt
- 16 oz (450g) cream cheese, softened to room temperature
- 0.5 cup (100g) granulated sugar
- 0.75 cup (180g) pumpkin puree
- 2 large eggs, room temperature
- 1 tsp (5g) vanilla extract
- 1 tbsp (8g) cornstarch
- 1 tsp (2g) ground cinnamon
- 0.5 tsp (1g) ground ginger
- 0.25 tsp (0.5g) ground cloves
Instructions:
- Preheat oven to 325°F (160°C) and line a 9x9-inch baking pan with parchment paper, leaving an overhang on the sides.
- In a medium bowl, combine gluten-free gingersnap crumbs, almond flour, and salt.
- Pour in melted butter and stir until the mixture resembles wet sand.
- Press the mixture firmly into the bottom of the prepared pan using the bottom of a measuring cup.
- Bake the crust for 10 minutes, then remove and let cool slightly.
- In a large bowl, beat softened cream cheese and granulated sugar together until smooth and fluffy (about 2-3 minutes).
- Stir in the pumpkin puree and vanilla extract until the color is uniform.
- Add eggs one at a time, mixing on low speed until just combined.
- Sift in cornstarch, ground cinnamon, ground ginger, and ground cloves; mix until smooth.
- Pour the filling over the baked crust and smooth the top with a spatula.
- Bake for 40 minutes or until the edges are set but the center still has a slight wobble.
- Allow the bars to cool to room temperature, then refrigerate for 4 hours before slicing into 16 bars.
