Ingredients:
- 6 Roma tomatoes (approx 1.5 lbs / 680g), seeded and diced
- 1/2 cup (75g) white onion, finely diced
- 1/4 cup (15g) fresh cilantro, chopped
- 1 jalapeño (15g), minced
- 2 tbsp (30ml) fresh lime juice
- 2 cloves garlic (6g), minced
- 1/2 tsp (3g) salt
- 1/4 tsp (1g) ground cumin
Instructions:
- Dice the Roma tomatoes by slicing them in half and scooping out the watery seeds before dicing into small cubes. Finely dice the onion and mince the garlic and jalapeño.
- In a medium mixing bowl, combine the diced tomatoes, onion, cilantro, jalapeño, and garlic.
- Pour the fresh lime juice over the mixture and sprinkle in the salt and cumin. Stir gently with a spoon until the vegetables are evenly coated.
- Let the salsa sit at room temperature for 10 to 15 minutes before serving to allow the flavors to meld.
