Ingredients:

  • 6 Roma tomatoes (approx 1.5 lbs / 680g), seeded and diced
  • 1/2 cup (75g) white onion, finely diced
  • 1/4 cup (15g) fresh cilantro, chopped
  • 1 jalapeño (15g), minced
  • 2 tbsp (30ml) fresh lime juice
  • 2 cloves garlic (6g), minced
  • 1/2 tsp (3g) salt
  • 1/4 tsp (1g) ground cumin

Instructions:

  1. Dice the Roma tomatoes by slicing them in half and scooping out the watery seeds before dicing into small cubes. Finely dice the onion and mince the garlic and jalapeño.
  2. In a medium mixing bowl, combine the diced tomatoes, onion, cilantro, jalapeño, and garlic.
  3. Pour the fresh lime juice over the mixture and sprinkle in the salt and cumin. Stir gently with a spoon until the vegetables are evenly coated.
  4. Let the salsa sit at room temperature for 10 to 15 minutes before serving to allow the flavors to meld.
