Ingredients:
- 4 medium Roma tomatoes (approx. 350g), seeded and finely diced
- 1/2 cup (75g) white onion, finely diced
- 1/2 cup (15g) fresh cilantro, stems removed and chopped
- 1 medium jalapeño (10g), seeded and minced
- 2 tbsp (30ml) fresh lime juice
- 1/2 tsp (3g) sea salt
Instructions:
- Remove the seeds from the Roma tomatoes and dice them into uniform 1/4-inch pieces. Place the diced tomatoes in a mixing bowl and sprinkle with salt; let them rest for 5 minutes to release excess moisture.
- Finely mince the white onion and jalapeño. Fold the onion, jalapeño, and chopped cilantro into the bowl with the tomatoes.
- Squeeze fresh lime juice over the mixture and gently toss with a spoon to coat. Taste and adjust salt if necessary.
