Ingredients:

  • 4 medium Roma tomatoes (approx. 350g), seeded and finely diced
  • 1/2 cup (75g) white onion, finely diced
  • 1/2 cup (15g) fresh cilantro, stems removed and chopped
  • 1 medium jalapeño (10g), seeded and minced
  • 2 tbsp (30ml) fresh lime juice
  • 1/2 tsp (3g) sea salt

Instructions:

  1. Remove the seeds from the Roma tomatoes and dice them into uniform 1/4-inch pieces. Place the diced tomatoes in a mixing bowl and sprinkle with salt; let them rest for 5 minutes to release excess moisture.
  2. Finely mince the white onion and jalapeño. Fold the onion, jalapeño, and chopped cilantro into the bowl with the tomatoes.
  3. Squeeze fresh lime juice over the mixture and gently toss with a spoon to coat. Taste and adjust salt if necessary.
