Ingredients:

  • 1/2 cup (50g) oat flour
  • 1 scoop (30g) vanilla whey protein powder
  • 1 tsp baking powder
  • 1/4 tsp sea salt
  • 1/2 tsp ground cinnamon
  • 1/2 cup (115g) non-fat plain Greek yogurt
  • 1 large egg
  • 2 tbsp unsweetened almond milk
  • 1 tsp vanilla extract

Instructions:

  1. Plug in your waffle iron and preheat to a medium-high setting. Lightly coat the plates with non-stick avocado oil spray once hot.
  2. In a large mixing bowl, whisk together the oat flour, vanilla protein powder, baking powder, sea salt, and cinnamon to ensure even distribution of leavening agents.
  3. Add the Greek yogurt, egg, unsweetened almond milk, and vanilla extract to the dry ingredients. Whisk until a thick, uniform, pourable batter forms.
  4. Pour the batter onto the center of the preheated waffle iron. Close the lid and cook for 3-5 minutes, or until the exterior is mahogany-colored and the steam has mostly subsided.
  5. Carefully remove the waffles and place them on a wire cooling rack for 60 seconds to allow the crust to set and become shattering crisp before serving.
