Ingredients:
- 1/2 cup (50g) oat flour
- 1 scoop (30g) vanilla whey protein powder
- 1 tsp baking powder
- 1/4 tsp sea salt
- 1/2 tsp ground cinnamon
- 1/2 cup (115g) non-fat plain Greek yogurt
- 1 large egg
- 2 tbsp unsweetened almond milk
- 1 tsp vanilla extract
Instructions:
- Plug in your waffle iron and preheat to a medium-high setting. Lightly coat the plates with non-stick avocado oil spray once hot.
- In a large mixing bowl, whisk together the oat flour, vanilla protein powder, baking powder, sea salt, and cinnamon to ensure even distribution of leavening agents.
- Add the Greek yogurt, egg, unsweetened almond milk, and vanilla extract to the dry ingredients. Whisk until a thick, uniform, pourable batter forms.
- Pour the batter onto the center of the preheated waffle iron. Close the lid and cook for 3-5 minutes, or until the exterior is mahogany-colored and the steam has mostly subsided.
- Carefully remove the waffles and place them on a wire cooling rack for 60 seconds to allow the crust to set and become shattering crisp before serving.
