Ingredients:

  • 1 can (15 oz / 425g) black beans, drained and rinsed
  • 1/2 cup (60g) finely diced onion
  • 2 cloves (6g) minced garlic
  • 1/4 cup (30g) finely ground walnuts
  • 2 tbsp (30ml) olive oil
  • 1 tsp (5g) ground cumin
  • 1 tsp (5g) smoked paprika
  • 1/2 tsp (3g) garlic powder
  • 1/2 tsp (3g) sea salt
  • 1/4 tsp (1g) black pepper

Instructions:

  1. In a large mixing bowl, combine the rinsed black beans and press down with a potato masher until mostly broken but still chunky; avoid blending into a smooth paste.
  2. Stir the diced onion, minced garlic, and ground walnuts into the mashed beans.
  3. Fold in the ground cumin, smoked paprika, garlic powder, salt, and black pepper, mixing until the spices are evenly distributed and the mixture feels tacky.
  4. Divide the mixture into 4 equal portions and shape them into patties approximately 3/4 inch thick, pressing firmly with palms to ensure density.
  5. Heat olive oil in a skillet over medium-high heat until shimmering.
  6. Place patties in the pan and cook for 4–5 minutes per side without moving them, until a deep mahogany-colored crust forms and the center is heated through.
