Ingredients:

  • 1 lb lean ground beef
  • 1 tbsp taco seasoning
  • 16 oz Velveeta cheese, cubed
  • 1 can (14.5 oz) Rotel Diced Tomatoes and Green Chilies

Instructions:

  1. Place the ground beef in a large skillet over medium-high heat. Break the meat apart with a spatula, cooking until completely browned and no pink remains.
  2. Stir in the taco seasoning during the last 2 minutes of browning to toast the spices. Drain every drop of excess grease from the pan.
  3. Reduce the heat to medium-low. Add the cubed Velveeta cheese directly into the pan with the beef. Stir constantly and gently until the cheese is smooth and glossy.
  4. Fold in the entire can of Rotel, including the juices. Continue stirring for 3-5 minutes until the dip is fully integrated and reaches a bubbling, velvety consistency.
  5. Remove from heat immediately once smooth and serve.
