Ingredients:
- 1 cup (225g) cottage cheese
- 1 1/2 cups (190g) all-purpose flour
- 1 tsp (5g) baking powder
- 1/2 tsp (3g) salt
- 1 large (50g) egg, beaten
- 1 tbsp (15ml) water
- 2 tbsp (12g) everything bagel seasoning
Instructions:
- Blend the cottage cheese in a blender or food processor until it is completely smooth and velvety. Note: This removes the lumps for a professional texture
- In a large bowl, whisk together the flour, baking powder, and salt.
- Pour the blended cottage cheese into the dry ingredients.
- Stir the mixture with a spatula until a soft, tacky dough forms. Note: Don't over knead or it will get tough
- Divide the dough into 4 equal portions.
- Roll each piece into a log and join the ends to form a circle, or poke a hole through the center with your thumb.
- Brush the tops with the beaten egg and water mixture.
- Sprinkle the everything bagel seasoning generously over the egg wash.
- Bake in an oven at 375°F (190°C) for 20-25 minutes until mahogany colored and hollow sounding.
- Alternatively, use an air fryer at 350°F (175°C) for 12-15 minutes until the edges are crisp and golden.
