Ingredients:
- 1 package (85g) sugar-free strawberry gelatin
- 1 cup (240ml) boiling water
- 8 oz (225g) plain strained Greek yogurt
- 8 oz (225g) whipped topping, thawed
- 1 can (20 oz / 567g) crushed pineapple, drained
Instructions:
- Dissolve the strawberry gelatin in boiling water, stirring until crystals are completely gone. Set aside to cool to room temperature until thick but still pourable.
- In a large mixing bowl, whisk together the Greek yogurt and the cooled gelatin until the color is uniform.
- Using a rubber spatula, gently fold in the whipped topping until no white streaks remain, being careful not to deflate the mixture.
- Gently fold in the drained crushed pineapple.
- Transfer the mixture to a chilled 9x9 inch serving dish and refrigerate for at least 1 hour before serving.
