Ingredients:

  • 1 package (85g) sugar-free strawberry gelatin
  • 1 cup (240ml) boiling water
  • 8 oz (225g) plain strained Greek yogurt
  • 8 oz (225g) whipped topping, thawed
  • 1 can (20 oz / 567g) crushed pineapple, drained

Instructions:

  1. Dissolve the strawberry gelatin in boiling water, stirring until crystals are completely gone. Set aside to cool to room temperature until thick but still pourable.
  2. In a large mixing bowl, whisk together the Greek yogurt and the cooled gelatin until the color is uniform.
  3. Using a rubber spatula, gently fold in the whipped topping until no white streaks remain, being careful not to deflate the mixture.
  4. Gently fold in the drained crushed pineapple.
  5. Transfer the mixture to a chilled 9x9 inch serving dish and refrigerate for at least 1 hour before serving.
