Ingredients:
- 5 bone-in, skin-on chicken thighs (approx. 2.5 lbs)
- 2 tbsp olive oil
- 1 tsp fine sea salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp smoked paprika
Instructions:
- Use paper towels to pat each chicken thigh bone-dry, paying extra attention to the underside.
- Drizzle the olive oil over the thighs and rub it in evenly.
- In a small bowl, combine salt, pepper, garlic powder, onion powder, and paprika. Sprinkle the mixture generously over all sides of the chicken, pressing the spices into the skin.
- Place a wire rack on a rimmed baking sheet and arrange the thighs on top, skin-side up, ensuring they are not touching to allow airflow.
- Bake in a preheated 400°F (200°C) oven for 35-40 minutes until the skin is deep mahogany brown and juices run clear.
- Use a meat thermometer to ensure the thickest part of the thigh has reached 165°F (74°C).
- Remove from the oven and let the chicken rest on the rack for 5-10 minutes before serving.
