Ingredients:

  • 5 bone-in, skin-on chicken thighs (approx. 2.5 lbs)
  • 2 tbsp olive oil
  • 1 tsp fine sea salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika

Instructions:

  1. Use paper towels to pat each chicken thigh bone-dry, paying extra attention to the underside.
  2. Drizzle the olive oil over the thighs and rub it in evenly.
  3. In a small bowl, combine salt, pepper, garlic powder, onion powder, and paprika. Sprinkle the mixture generously over all sides of the chicken, pressing the spices into the skin.
  4. Place a wire rack on a rimmed baking sheet and arrange the thighs on top, skin-side up, ensuring they are not touching to allow airflow.
  5. Bake in a preheated 400°F (200°C) oven for 35-40 minutes until the skin is deep mahogany brown and juices run clear.
  6. Use a meat thermometer to ensure the thickest part of the thigh has reached 165°F (74°C).
  7. Remove from the oven and let the chicken rest on the rack for 5-10 minutes before serving.
