Ingredients:

  • 2 cups (180g) Old-fashioned rolled oats
  • 3 cups (710ml) Unsweetened almond milk
  • 1 tbsp (7g) Ground flaxseed meal
  • 2 medium (300g) Granny Smith apples, diced into 1/4-inch cubes
  • 1 tsp (2g) Ground cinnamon
  • 1/4 tsp (0.5g) Ground nutmeg
  • 1 pinch (1g) Sea salt
  • 2 tbsp (42g) Pure maple syrup
  • 1/4 cup (30g) Raw walnuts, roughly chopped

Instructions:

  1. Place the rolled oats in the dry saucepan over medium heat.
  2. Stir constantly for 3–5 minutes until the oats smell nutty and turn a pale golden hue.
  3. Pour in the almond milk, flaxseed meal, and sea salt.
  4. Bring the mixture to a gentle simmer, then reduce heat to low.
  5. Stir occasionally for 5–7 minutes until the liquid is absorbed and the texture is creamy.
  6. Stir in the diced apples, cinnamon, nutmeg, and maple syrup.
  7. Cook for an additional 3–5 minutes until the apples become slightly translucent and the mixture is glossy.
  8. Remove from heat immediately.
  9. Divide into four bowls.
  10. Top each serving with a handful of chopped walnuts.
